Old Harvest Solera is a unique, oxidative PX, shifting away from overly sweet interpretations towards a more refined, medium-dry profile reminiscent of Oloroso or Palo Cortado, though crafted entirely from PX grapes.
Made in old American Oak barrels with a capacity of 225 litres previously vinified with PX musts. These barrels establish the Soleras and Criaderas method. The Solera is the bottom row closest to the ground and there are 4 rows ‘criaderas’ that make up the system, the first being the solera and so on... Only 20% of wine can be extracted from the Solera each year, the rest continues to contribute to the criaderas, flowing down the rows. This is how vintages are masterfully blended and why this is a non-vintage wine. The average age of the wine is 18 years.
This wine shows remarkable density and elegance, with a smooth, buttery texture and pronounced flavours of quince, gingerbread, smoke, roasted coffee. It’s not heavy but is persistently warming and complex.
