Grape: Pedro Ximenez
This is the first dry PX in the history of Jerez. Made from 100% Pedro Ximénez white wine, which is left on the vine for 21 additional days to the traditional harvest. It is harvested by hand in boxes of a maximum of 15 kilos, to avoid damage to the fruit. Gently pressed with yields per ton less than 600 litres of must. The must is transferred into 300-litre French oak barrels along with skins. 30 litres are added to the barrel each day, hence it is called ‘Slow Fermentation’ as yeasts use up all the sugars daily. The resulting wine is completely dry, a difficult feat for the Pedro Ximénez variety due to its ability to maintain high levels of residual sugar. The musts are aged on lees with gentle battonage for 6 months in barrels to reach a very complex structure.
The time and effort to craft this wine is justified with the extraordinary result. The aromatic characteristics are completely unique and unrivalled. Its texture is saline, due to the proximity of the Atlantic Ocean. On the palate it is soft, dry, rich, and concentrated with flavours of dried mango, prunes, herbs, spices, and nuts.
