Another of those wines that are truly unique to their origin and made from local grapes, 100% Assyrtiko from the volcanic Greek island of Santorini. I had this in a Greek restaurant with grilled Sea Bass and it’s hard to think of a better match. This is a delicate wine but with great intensity of fruit. Quite oily in texture with a hint off saltiness and with great mineral flavours. Will also pair well with grilled vegetables and pasta but boy, it’s good with fish..
