La Bota 111 is a new release of a single vintage (2018) Manzanilla sourced from the single vineyard, Pago Miraflores La Baja and made from 100% Palomino Fino grapes from a vineyard which is planted with vines over 80 years old. Being a single vintage this not the product of a “solera” system, but rather a number of strictly controlled barrels (kept under padlock by the Consejo!). It has a character that really emphasises the vinous quality of the grapes from this vineyard even when aged under flor at 15% abv. Brilliant gold in colour, with a sublime combination of delicacy and pungency. Vibrant and fresh, with an electric energy, umami complexity and appealing notes of polish … immensely long and appetising. Under screw-cap.
